Lucky Leprechaun Parfaits
Hey friends!
I hope you are all enjoying your weekend. Yesterday, I spent the day getting my nails done for St. Patty’s day and doing a little Spring decor shopping. I also tried out a fun recipe I found on Pinterest that I thought I’d share with you guys! When it comes to the holidays or fun events, you all know I love to decorate my home, but I also enjoy celebrating by making themed treats. St. Patty’s day is no exception! This year, I didn’t have a lot of time on my hands so I wanted to do something that was going to be easy, but delicious too! After doing some digging on Pinterest I came across these festive Lucky Leprechaun Parfaits!
They are full of sugar, but the perfect treat to throw together if you are short on time. It probably took me about 3 minutes to throw them together. Here is what you will need to make them:
INGREDIENTS
Premade brownies (you can certainly make your own, but I found it easier to just pick some up from the bakery)
Chocolate mint cookies (Girl Scout Thin Mint cookies are great for this or you can just buy the off-brand at your local grocery store)
Chocolate pudding
Vanilla pudding
Cool whip
Green or chocolate sprinkles or both! :)
Green food coloring
INSTRUCTIONS
You’ll first want to cut your brownie into bite-size pieces. Place half of it in your cup. Next, take your chocolate pudding and pour it on top of the brownie bites. Then, take some of your thin mint cookies and crush them up to pour over the pudding. Next, grab the rest of your brownie and place that on top of the cookie crumbles. Take your green food coloring and mix it in with the vanilla pudding. Pour over the brownie bites. Top with some cool whip and sprinkles and enjoy! :)
